Adapt the metadata indexers to array-typed columns

Follows the kamo-shared-library change that maps conversations/search_index array columns as String[]/UUID[] rather than List<T>, which is what stopped every indexed message from being written at all. Reading a column that may be null is now explicit: toSet/toArray return an empty collection instead of letting Arrays.asList(null) throw, and participants and folder ids keep insertion order through a LinkedHashSet so a re-index does not churn the stored order.
