Adds a contact-level `dateOfBirth` (java.time.LocalDate, DATE column) to the base Lead: entity + Create/Update/LeadDTO (fromLead), copied in LeadService create/update and both mortgage-subclass convert helpers so it survives a market switch. Tracked in the lead-history registry (Contact) and masked as PII in maskContactInfoFromOthers. Nullable, no default — safe ALTER ADD COLUMN.
