Address the quote to a person; summary stops costing header height

Moving the summary out of the right-hand column fixed the width but bought it back as a band under the title. It now sits in the gap that already existed between the title and the quick actions, so it costs no space at all. That gap is finite, so fewer show inline and the rest stay one click away — an order carries twelve and would crowd out the actions. It remains visible at every width rather than disappearing on narrow screens. The quote also gains its addressee: who it is for, optionally their address and phone. These lead the first section because it is the first thing you decide, and when an account is linked the name field shows what it would otherwise fall back to. The preview's "Prepared for" block renders all three and reflects what is being typed rather than what was last saved.
