Correct the README to the routes that actually shipped

The WebRTC endpoint moved from /webrtc/<ch>/whep to /live/<ch>/whep when channels were renamed live/<ch> to drop StripPrefix, and the README still described the old shape. Also records three things only visible from the running service: why the channel name carries the live/ prefix, why the init container prefers loop.mp4 over the original, and that WHEP is video-only because WebRTC carries Opus and MediaMTX does not transcode AAC.
