Bump the processed counter instead of rewriting the endpoint

The job finished a batch by mutating totalProcessed on the endpoint entity it loaded before the batch began and saving the whole row. Two consequences: - it wrote back every other field as they were at load time, so pausing an endpoint (or clearing isMappingConfigured) while a run was in flight was silently reverted — the gate looked closed and the run carried on; - the full-row update collided with concurrent inbound POSTs on the same row. Now a targeted single-column increment via recordProcessed.
